Slow Cooked Beef Curry...

Home Cooked Spicy Goodness...


Tender beef? Check! Lots of flavour? Check! Enough to last you for a few meals (Therefore allowing you to be lazy for the rest of the week)? Check! This is an Easy Peasy way to make an absolutely delicious curry that will save you pennies as an alternative to buying take out! The best thing is that i doesn't even require much effort as you chuck all the ingredients together and leave them to simmer for 2 hours! Well, you will still need to give it an occasional stir...

 

What You Will Need:

A good sized packet of Diced Beef
1 Tin of Chopped tomatoes
1 Large Potato
1 Large Onion
3 Tbsp Curry Powder- I used medium!
2 Garlic Cloves- Crushed
300 ml Beef Stock

Method:

  • Heat some oil in a good sized pan and fry of the beef and onions together until the beef has browned.
  • Add the Garlic cloves
  • Add in the curry powder making sure all of the meat is coated!
  • Peel and Cube the potato, add to pan along with tomatoes and beef stock
  • Lower heat to gentle simmer and leave for 2 hours, stirring occasionally


WARNING: When you first add all of the ingredients it will seem REALLY watery- fear not! Leave the lid of the pan and leave to cook as the sauce will thicken as the water evaporates over time. Unfortunately, I had no naan bread in the flat at the time of cooking this curry (sad face!) so I just had to make do with rice. This is a filling meal however so you don't really need a naan (I just love a good naan with a curry is all!). 

Go ahead and cook this for someone! It's so good! The Meat becomes tender and the potato softens as it cooks- I really may have to go and make some more after all of this writing!
