Spicy Tomato and Red Pepper Soup...

Soup Glorious Soup!

This is a really easy way to get some of your 5 a day and is always great for if your going on a health kick as its not fattening and it doesn't have the amount of salt that you'll find in tinned soups. It's also great because you can make enough to get a few portions- freezing is always great if you don't want to eat soup for days in a row! This is definitely the meal for a cold winter day or simply if your on a tight budget.

You Will Need:


  • 6-8 Tomatoes
  • 2 Red Peppers
  • 500 ml Vegetable Stock
  • 1 Chilli
  • 1 Carrot
  • 4 Garlic Cloves
  • Olive Oil 

 Method:

  • Preheat oven to 180 - 200 degrees
  • Chop all of the veg and arrange in a baking tray
  • Drizzle veg in olive oil, season and place in oven for 30 minutes until veg are slightly charred
  • Once veg is cooked, place in saucepan with 500 ml of vegetable stock and boil for 5 minutes
  • Blend together and serve with Bread
 This is a really easy soup to make and requires little fuss, so when your stumbling home after cold hard day you should really try it!
