Easy Peasy Paella!

Chorizo and Chicken Paella...

Recently I've been craving a bit of Spanish food and having never made paella before I thought I'd give it a try. I was a bit nervous about making this dish because one thing I can never get right when cooking is rice. I'm awful with it usually over/under cooking it and never getting it quite right. Since rice is the core ingredient in paella I'm sure you can see why I was nervous.

Tesco have  released a fab 'ingredients' range of seasonings and rices for dishes that people may not have tried making before. They aren't costly so you should check them out here!






  • 200g Paella Rice
  • 1 Large Onion
  • 150g Chorizo- Sliced
  • 1 Chicken Breast Fillet
  • 35g Sachet Paella Seasoning
  • 500 ml Chicken Stock
  • A Handful of Frozen Peas
  • 1 Garlic Clove- Crushed
  • 1 Red Pepper







  •  Heat a few drops of oil in a big pan (I used a wok).
  • Add the onion, garlic, chicken, chorizo, peppers,  peas and rice ad cook together for 5 minutes.
  • Ad the seasoning making sure that everything is coated.
  • Add the chicken stock and simmer for 15-20 minutes. Make sure that the pan is cover with either a lid or some tin foil.
  • If you wanted to add prawns add them for the last 5 minutes of the cooking time by just placing them on top of the rice and covering the pan again.

That's it! I can tell you now that I had no need to feel nervous at all! What I hadn't realised was that paella is a 'chuck it in the pot and leave it' recipe, so everyone can make it (though people do seem impressed when you announce that you are a paella cooking student ha ha). One thing with this dish is that it can be quite costly buying all of these ingredients for the first time but once you have half of it you wont need to buy again for a while, i.e. chicken stock, paella rice etc. It's definitely something that I will be making again in the near future!

  1. Alternatively, if you've got spices in stock, you could add paprika, cumin and parsley to save money (instead of buying a mix). Admittedly saffron is ubiquitous with paella, but students can't afford it and spice mixes will contain only homeopathic amounts, so instead we cheat and use a bit of turmeric to colour the dish instead x
